Vegetable Ghrita Upma

Ingredients:

  • 1 cup semolina (sooji)
  • 2 tablespoons Thapovana Ghrita
  • 1 teaspoon mustard seeds
  • 1 teaspoon urad dal (split black gram)
  • 1 onion, finely chopped
  • 1 carrot, grated
  • 1/2 cup green peas
  • 2 cups water
  • Salt (to taste)
  • Fresh coriander leaves for garnish

 Instructions:

  1. Dry roast semolina in a pan until it turns golden brown. Set aside.
  2. In the same pan, heat Thapovana Ghrita. Add mustard seeds and urad dal.
  3. Once the seeds splutter and dal turns golden, add chopped onions and sauté until translucent.
  4. Add grated carrot and green peas. Cook for a few minutes.
  5. Pour water into the pan and bring it to a boil.
  6. Gradually add the roasted semolina, stirring continuously to avoid lumps.
  7. Cook until the upma thickens. Add salt to taste.
  8. Garnish with fresh coriander leaves before serving
