Ghrita-infused Lentil Soup

Ingredients:

  • 1 cup dried lentils (green or brown), rinsed
  • 4 cups vegetable broth
  • 2 tablespoons Thapovana Ghrita
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper (to taste)
  • Fresh cilantro for garnish

Instructions:

  1. Sauté Vegetables: In a large pot, heat Thapovana Ghrita over medium heat. Add chopped onion, carrots, celery, and garlic. Sauté until vegetables are tender. 
  2. Add Lentils and Spices: Add rinsed lentils, ground cumin, paprika, salt, and pepper to the pot. Stir well to coat the lentils and vegetables with the spices. 
  3. Pour in Broth: Pour in the vegetable broth. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes or until lentils are tender.
  4. Adjust Seasoning: Taste the soup and adjust salt and pepper if needed. 
  5. Serve: Ladle the Ghrita-infused Lentil Soup into bowls, garnish with fresh cilantro, and enjoy the heartiness and creaminess of this delightful soup.
